I wanted to share a recipe for a simple chicken salad that I have all the time! I really like it; there are only three ingredients, and it is really easy to make and great to have on hand!
Here are the ingredients:
- 1 can chunk chicken
- about 1 Tbsp. pesto
- about 1 Tbsp. mayonnaise
Some of the measurements are rough because the pesto that I use comes in cubes, because we make pesto ourselves, put it in ice cube trays, and put it in the freezer. The amount of pesto that I use per one can of chicken is around the size of one ice cube, which I am assuming is approximately one tablespoon!
The mayo can also be added to taste. If you feel like a more creamy chicken salad, you can add more; if you want it a bit drier, you can add less.
Put the chicken from the can (drained, if there is any excess liquid) into a large container and mix around with a fork. This usually breaks up the chicken and makes it a texture as if it has been shredded.
Then add the mayonnaise and pesto. Mix around until it is well incorporated. And that’s it! Store it in the fridge if you don’t eat all of it at once!
I love to eat this recipe in many different ways; you can eat it alone or with some bruschetta on top of a cracker or bread, with some cheese on a grilled sandwich with some tomato soup on the side, or with whatever else you may want it!
